Peanut Butter Sandie Ice Cream Sandwiches

I don't know about everywhere else in the world, but in Texas it is ice cream weather year round. These are the perfect little treat to have wrapped up in the freezer, ready to grab.
Ingredients
2 ½ cups flour
½ tsp. baking soda
½ tsp. baking powder
2 sticks salted butter, softened
1 cup sugar
1 egg
½ cup peanut butter, crunchy
1 tsp. salt
1 quart ice cream, softened
Candy sprinkles for decoration
Sift the first three ingredients together in a small bowl and set aside. In a stand mixer, or using a hand mixer, cream the butter until it is fluffy. Add the sugar and continue to mix until it is completely incorporated with the butter.
Scrape the sides of the bowl and add the egg, peanut butter, and salt. Mix this, scraping the sides of the bowl to make sure that it is all incorporated. Then add the flour mixture and mix just until a soft dough forms.
I used a one ounce cookie scoop to portion out little balls of the dough. Arrange on a cookie sheet and, using a fork, make the peanut butter cookie signature “crisscross” to mash them down. Bake the cookies at 400° for 10-12 minutes and then let cool completely.
Easy assembly and fun for the kids
This is a great project for kids! All you do is “sandwich” a scoop of ice cream between two cookies and roll the edge in colorful sprinkles. If you and your helpers don’t eat them all right away, wrap what is left in plastic and store in the refrigerator.
