This is similar to the green sauce that you get at TexMex Restaurants, but so much better. I like to make this for holiday get-togethers and potlucks, or even for a taco night fiesta.
You want to make this the day before and let it chill over night. As with all of my recipes, I recommend using the freshest ingredients that you have available to you. This recipe is simple, fresh, delicious, and this is all you will need:
Ingredients:
½ lb. yellow plum tomatoes, quartered
2 medium tomatillo, husks removed, diced
2 medium jalapenos, sliced into rounds
3 large avocados, peeled and cubed
¼ cup cilantro leaves, packed tightly
2 cups sour cream, (you can substitute Greek yogurt)
Salt and pepper, to taste
In a saucepan, over medium-high heat, combine the tomatoes, tomatillos, and jalapenos. Stir the mixture while it is heating up to help get the juices from the tomatoes flowing. Once it reaches a boil, turn the heat down slightly, cover, and let cook for 15-20 minutes, or until the tomatillos and peppers are soft. Remove the pan from the heat and let it cool to room temperature.
Add the avocados, cilantro, and sour cream to a food processor or blender. Pour the cooled tomato mixture in and pulse until smooth. Taste the mixture and add salt and pepper as needed.
Chill the dip for at least an hour before serving. It can be eaten with tortilla chips or on top of tacos or nachos.
Whether it is for a celebration or just for you and your family to enjoy, this dip is so fresh and delicious, everyone will be asking for more.
